roasted chickpeas tips / recipe
I am a straight up sucker for anything with chickpeas. I used to eat them straight out of a can when I was a little girl - it’s always been an obsession. And I can’t tell you when I started roasting them - I am sure when it became a simple snack that was everywhere, I said to myself…I can do that!
And I do…at least once a week, I make a batch to snack on, add to salads or pastas etc. And I get asked often how to get them crispy…so here you go!
I use Whole Foods 365 organic chick peas [ in the can ] - they have the best flavor and the color never looks funky like some other brands.
Step one is to rinse and drain them….very well.
From here…pat them dry, like really pat those babies dry! You want any access moisture to be totally gone before roasting…this will give you the best crunch!
After they are dry, you are ready to bake! I line a large baking sheet with parchment and spread the chickpeas into a single layer.
Literally you can season them with anything…truly. I have used fish seasoning, lemon pepper, taco seasoning, chili pepper, curry powder or just simply salt and pepper. The chickpea is your oyster! HA!
Bake them at 400 degrees for about 25 mins until crispy and they can be shaken on the pan. I say 25 mins because longer can make them burn - if they need more time from here, just watch them!
