girl scout casserole

Girl Scout Casserole is a made up dinner that we had most weeks growing up. It covers all the bases: protein, carbs & veggies. Boom.

And? It’s inexpensive and super simple to make. It’s my go - to for bringing to new mama & dada friends when they get home from the hospital because it is all the things above + nourishing, yummy, and easy to reheat OR freeze!

It is also super versatile to switch up for dietary restrictions so, woo! Happy easy dinner time to all!

Ingredients:

1 lb of ground turkey, chicken or beef 

1 jar of marinara 

1 bag of pre cut green beans (not canned) 

4 to 5 potatoes (I use red because I love the earthly flavor but you can use any varietal), cubed with skins left on 

***you can also substitute mashed cauliflower which I’ve done many times and is SUPER yummy!***

1/4 cup to 1/2 cup milk or milk substitute 

2 tbls butter 

Herbs de Provence 

Parmesan cheese 

Directions: 

  1. Preheat your oven to 350 degrees 

  2. Bring a large pot of salted water to boiling + add potatoes 

  3. Brown the meat in a skillet until completely cooked through and add the sauce just to coat, remove from heat 

  4. Layer the meat with sauce into a baking dish 

  5. Layer the green beans on top of the meat 

  6. By this point your potatoes should be close to cooked and should be super soft when sticking a fork into them 

  7. Drain potatoes, add salt + pepper, milk or milk substitute and a bit of butter and mix with a mixer until smooth and delish - I like to add a bit of dried herbs here, really anything just to make them super flavorful 

  8. Spread the potatoes over the layer of green beans and top with parmesan cheese 

  9. Bake for 30ish mins or until the cheese is toasty and the potatoes are crusty 

Serve with a yummy salad and some crusty French bread!
