valentines day breakfast

I’m one of those people that L O V E S Valentine’s Day.

Not for the material things or the validation but for the love shown to all, spread all over social media: confessing love, bragging of love, hearts and heart clothing, and heart food and all HEARTS. 

Naturally I wanted to be extra for Annabelle’s first Valentine’s Day so I whipped up these pink protein heart waffles with strawberry rose butter ♥️ I love making new traditions and with a little one, it makes it extra sweet!

***to make the protein pancakes pink ( I use the Kodiak Cakes mix ), add a 1/2 tea spoon at a time of beet juice until you get the color you desire***

Sweet Strawberry Rose Petal Butter

Ingredients:

  • 1/2 cup fresh strawberries with stem cut off

  • 2 tablespoons sugar

  • 1/4 teaspoon fine salt

  • 1/4 cup unsalted, softened butter

  • 1 teaspoon crushed rose petals ( I purchase mine on etsy )

Directions:

  1. In a large sauce pan combine the sugar and strawberries and cook until softened over medium heat, about 5 mins.

  2. Pour the mixture through a fine strainer - you should have about a tablespoon of liquid.

  3. And the butter and beat or mix FAST - the butter will be sloshy for a bit but it will come together.

  4. When the consistency is as butter like with a pinkish hue, fold in the rose petals

  5. Scoop the butter onto plastic wrap and mold into a log.

  6. Immediately place in the fridge for at least two hours

  7. Pull out and top pancakes, waffles or warm muffins and ENJOY!
