cinnamon blueberry loaf

This loaf is pure morning sunshine.

Considering I am ( cough ) preggs, another week of sweets and treats for the nurses…so I kind of just winged it with this one. I was using what I have in the fridge in hopes this was my last week of making sweets. Not because I don’t love it but because I AM READY FOR BABY P!

Anyways, recipe is below! Perfect for brunch this weekend!

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 3/4 cup coconut sugar

  • 1/2 cup buttermilk

  • 1/4 cup coconut oil

  • 1/2 stick unsalted butter, room temperature

  • 2 large eggs

  • 1 1/2 teaspoons bourbon vanilla extract (it’s the best! From Trader’s - makes it just a little tinge more fragrant!)

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 2 tablespoons brown sugar

  • 1 teaspoon cinnamon

  • 1/2 teaspoon maple syrup

  • a cup of blueberries

  • cinnamon & sugar to sprinkle on top

PREPARATION

  1. Preheat oven to 350º and lightly grease a 9x5-inch loaf pan with coconut oil spray

  2. In a bowl, whisk together flour, baking powder and salt, and set aside until ready to use

  3. In a large bowl beat together oil, 1/4 cup butter and coconut sugar for 3 minutes, or until fluffy

  4. Beat in eggs one at a time, then mix in vanilla extract

  5. Add in the buttermilk while stirring

  6. Add in the dry ingredients in bunches, mixing until just combined

  7. Mix in brown sugar, cinnamon and molasses until incorporated

  8. Top with blueberries so they burst and spread when baking

  9. Bake for about 35 to 40 mins until toothpick comes out clean - sprinkle with cinnamon and sugar about 5 mins before removing from oven!

  10. Remove from oven and let cool 10 minutes, then turn out onto a wire rack.

  11. Slice and enjoy!
