apple pear almond bread

Over the last two years, I cannot even count how many doctors appointments, tests, blood work we have been to. It’s been a journey - and not one I would change since we are just T E N weeks away from meeting our miracle rainbow babe!

I started making goodies for the nurses at our doctors office a few months back because they have seen me cry and have panic attacks and full on meltdowns on multiple occasions and they are truly THE nicest angels.

I was in a slight funk the other day and was sick and just felt and with an upcoming appointment, I knew just the thing to get me feeling better - baking! E N J O Y - this was seriously a delight to have with coffee in the am.

Ingredients:

  1. 3 large eggs

  2. 1-1/2 cups coconut sugar

  3. 3/4 cup avocado oil

  4. 1 teaspoon vanilla extract

  5. 3 cups all-purpose flour

  6. 2 teaspoons baking powder

  7. 2 teaspoons ground cinnamon

  8. 1 teaspoon baking soda

  9. 1 teaspoon salt

  10. 2 medium finely grated ripe pears (plus another pear for slicing and topping)

  11. 2 medium finely grated sweet apples

  12. 1 teaspoon lemon juice

  13. 1 cup sliced almonds

Directions:

In a large bowl, combine the eggs, sugar, oil and vanilla; mix well.

Combine flour, baking powder, cinnamon, baking soda and salt; stir into the egg mixture just until moistened. Stir in pears, apples, lemon juice and almonds into batter.

Spoon into two greased (I used Trader Joe’s Coconut Oil Spray 9x5-in. loaf pans. I sliced a pear length wise and just added those to the top for prettiness, but it’s no necessary. You could even sprinkle with more almonds too!

Bake at 350° for 60 to 80 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Serve with tea or coffee and drool.
